5 DIY Popsicle Recipes for Summer

Firstly, if you don’t have a popsicle mold already, you’ll want to go out and get one for the summer; making your own popsicles is pretty easy and fun, and there are tons of great popsicle recipes out there.

The molds are only a couple bucks at Target or Walmart and they’ll make your lives infinitely better as you make your own popsicles this summer.

Here are some awesome popsicle recipes you’ll want to try to keep cool during the hot summer months.

1. Red White and Blueberry Yogurt Popsicle Recipe

1 heaping cup raspberries (or strawberries)
1 cup blueberries
1 cup vanilla flavored Greek yogurt

These are perfect for July 4th but you don’t really have to wait until then to try out this popsicle recipe. First, using a blender or food processor, you’ll puree the raspberries or strawberries until they’re smooth and then set it aside before doing the same with the blueberries.

Next, you’ll want to carefully layer your popsicles using the yogurt and two berry purees, starting with a layer of blueberry at the bottom of each mold. After the blueberry layer has been poured, you’ll freeze the mold until it’s solidified. Then, take it out to layer a bit of yogurt for the next stripe, and also put in the popsicle sticks, before placing the mold back in the freezer.

You’ll do a raspberry/strawberry stripe next, then freeze again, then alternate yogurt and raspberry/strawberry stripes until the molds are filled, freezing each layer until solid before adding the next one. Freeze the whole popsicle until completely solid before taking one out and saluting America with your patriotic pop!

2. Striped Creamsicle Popsicle Recipe

4 Bottles (6.75 oz.) of SunnyD Tangy Original flavor (roughly)
2 cups Vanilla Ice Cream, softened (approximately)

The first step in this recipe is to pour some SunnyD into each popsicle mold until they’re all about 1/3 full and then stick in the freezer and let it solidify. Then, mix about a cup of vanilla ice cream that’s been softened with just enough SunnyD to get a light orange color before pouring that mixture into each mold to fill up another 1/3.

Freeze again until it’s slushy (which should take about 20 minutes to a half hour) before putting the popsicle sticks in the center of each mold and freezing until they’re completely solid. Next, you’ll pour just enough vanilla ice cream into each mold so they’re full and then freeze again until they solidify. Lastly, you’ll take out the mold and help yourself to a yummy striped creamsicle popsicle!

(Sidenote: if you have trouble getting a popsicle out of the mold, hold the mold briefly under warm/hot water so you don’t end up just yanking out the stick.)

3. Whole Fruit Popsicle Recipe

About 2 kiwis
1 cup strawberry halves
1 cup chopped mango (roughly)
1 cup blueberries
1 cup watermelon (roughly)
1 cup chopped pineapple (roughly)

Use a food processor to puree one fruit at a time, rinsing out the machine between fruits. Spoon a layer of fruit at the bottom of each mold and freeze until solid.

Then, spoon another layer of fruit into each mold and place a popsicle stick into it, making sure to force the stick gently into the frozen layer so it stands up straight. Freeze the molds again until the second layer is solid, and continue to repeat this step until you’ve filled the molds and used each of your different fruit purees.

(Sidenote: if any of the fruit purees are a bit too thick or hard to work with, add in a little water).

4. Strawberry White Chocolate Popsicle Recipe

2 1/2 cups sliced strawberries
1 can (13.5 oz) full fat coconut milk
2/3 cup sugar
pinch of salt
1 tsp vanilla bean paste (or extract)
1 Tbsp vodka (optional)
White Chocolate Drizzle:
2 oz white chocolate, chopped
1 tsp coconut oil

These popsicles are kind of fancy so they require just a bit more work — but they look totally yummy so the effort is worth it. First, mix the strawberries, coconut milk, sugar, salt, vanilla bean paste/extract, and vodka (if you so choose) in a blender or food processor until the mixture is smooth.

Let the mix chill for about two hours or so in the fridge before filling your popsicle molds with the mixture, leaving about 1/2 inch or so at the top of each mold. Freeze for around an hour before you stick the popsicle sticks in and then let the popsicles freeze overnight.

Then, take out the popsicles and let them un-mold by keeping them at room temperature for around 5 minutes and put them on a baking sheet lined with parchment paper before freezing for another two hours.

To make the white chocolate drizzle, mix white chocolate and coconut oil in a bowl and microwave for 30 seconds before taking it out and stirring it; keep microwaving and stirring in 15 second shifts until the mixture is smooth and melty before letting it cool to room temperature. Finally, drizzle it over the popsicles, freeze the whole completed pop for about 20 minutes, and then eat!

5. Vietnamese Iced Coffee Popsicle Recipe

2 cups strong coffee (preferably dark roast)
1 14-oz can sweetened condensed milk

This recipe is super easy and if you’re a coffee lover, this is the perfect summer treat. All you have to do is let the coffee cool and then whisk the sweetened condensed milk and cooled coffee together.

Pour the mixture into the mold and let the popsicles freeze for at least five hours before taking one out and eating a yummy coffee pop!

If those five delicious popsicle recipes seem too complicated for you or don’t strike your fancy, you can always make a simple popsicle by just filling a mold with some type of juice (like orange or apple) or chocolate milk to make yourself a no-fuss pop.
